another version of Thai fried-rice's recipe...

we call this fried rice "khao klook kapi or shrimp paste fried rice"

Ingredients :
- 1-2 cups cooked rice
- 1/2 tbs. fermented shrimp paste or kapi
- 3 garlic, chopped
- 3 chilies, chopped

- 1-2 tbs conola oil
-------------------------------------
- 1/2 cup sliced chicken or pork
- 1/4 cup shallots, sliced
- 2 tbs. palm sugar
- 1 tbs fish sauce or nam pla

- 1 tbs dark soy sauce
- 1/2 ts. white pepper
- 1 stem cilantro root, chopped and pounded
- 1-2 tbs. conola oil

-------------------------------------

- 1/2 cup shredded omelette
- 1/4 cup small dried shrimps
- 1/4 cup shredded mango

- 1/4 cup green bean, chopped
- 1 shallot, sliced
- 1/2 cup cilantro, chopped
- 1/2 lime
- 2 chilies
-------------------------------------

Method :
1. Saute garlic in oil until golden, Add shrimp paste and chilies, then cooked rice. Stir fry until heated through before turning the heat off. Set aside.
2. Saute shallot in oil until golden. Add chicken or pork and continue to saute until it almost done., then add plam sugar, fish sauce, dark soy sauce, cilantro and white pepper. Set aside.
3. To serve, put around the fried rice small portions of chicken, omelette, dried shrimp, mango, green bean, cilontro, lime and chilies.

OahuAmateurChef ; Shrimp paste has strong favor. It might not be the right recipe for every one.
