Another Zesting Question

Sometimes I want zest but not juice. If I zest a citrus will the "naked" fruit keep for a while in the fridge - maybe a week or two? Would times be substantially different for lemons, limes, oranges, grapefruit?

I wrap mine in a small sandwich bag, and get a few days, not weeks.
I find the fruit does better in the baggie, than wrapped tight.
I suspect that the length of time the fruit can be kept may depend on the freshness.

Hi Shel,

citrus fruit freeze well. When thawed they release their juice readily.
The outer coating i.e zest of fruits, being basically oil rather then water, serves are an impermeable vapour barrier so that citrus freeze well for months.

If the fruit is zested, I would suggest you freeze the fruit in a resealable bag or even aluminum paper. I should last a while until you require some juice.

Zest of frozen fruit is useless. I have had mixed results when trying to freeze zest.

Hi, Thanks for the info. It just occured to me that I could freeze the juice. I don't see a problem with that, do you?

Just a thought - would there be a point in preserving the zested lemon (using salt to preserve)? Or is the point of preserved lemon to have the zest still on? I've never used the preserved ones, but I thought I'd just raise the question.
