Cooking in China article...

I don't believe this is representative of China generally. But the story is a good read.

Basically, the article exposes kitchen antics in China. I thought all you might like it.

Interesting---if true, and not just the ravings of a disgruntled ex-employee.

For an opposite view, a good read is "The Last Chinese Chef." It's a novel, but the culinary aspects are dead on. A great chance for insights into the nature of Chinese Imperial cooking.

I think it's a good indicator of the way the Chinese do business. Think of all the contaminated and poor quality food they've been sending to the US and elsewhere. That is why I no longer knowingly buy food products made in, or shipped from, China.

And just to put this article in perspective, trickery and deceit such as depicted in the story is not limited to restaurants in China. Based on some of the things I've read on this board, and some local restaurant kitchens I've visited over the years, such things happen in the US and other countries as well. Quite a few places will use inferior ingredients (define that any way you'd like) and pass them off to their customers as something other than what they actually are, although perhaps not to extent presented by the story.
