how do you cook your octopus

where i use to work i believe they use to cut off the legs discard the beak and ink sac....simmer the legs for two hours in a court bouillon(that's what i believe the liquid was) then i believe they took the skin off and grilled it.


not quite sure but i believe taht is what they did

how do you cook your octopus?

The whole polpi in salted lemon water, Dip it 3 times (so the legs curl and don't tangle up with the rest of the polpi) and simmer until tender. Clean out the head and pop out the beak.

Clean beak and innards out, rinse it. Place it in a hotel pan with 2 cups
of good red wine vinegar and 5 or 6 fresh or dry bay leaves. Cover with
aluminum foil and seal around edges well. Place in a preheated 375 degree
oven for 37 to 42 minutes...your going to have to work with it....let
it cool covered....char grill over high heat brushing with a mixture of
red wine vinegar, evoo, touch of sugar, and s&p. Its the other alternative
to boiling or simmering for hours....more of a mediterranean method...good luck...
