I need help

Hello everybody. I need help with preperation. I am cooking for 45 on Wednesday and want to start on Tuesday. I am cooking roasted potatoes and want to know how to keep them fresh if I cut them on Tuesday night.Please help me save some time. Thank you

Cut them, keep them in cold water.

Since they may take awhile to cook and take up a lot of space in the over, you may want to parcook them first, and then store them on a baking sheet in the fridge. Then season and roast when the time comes.
