What can I say except that I have the most appreciation for the cooking talent. We went on Royal Caribbean but I suppose all the cruise lines are basically the same.

I watch friends, family and strangers smile over fantastic food. I would like to mimic one or two of the dishes they served but know I can't.

My most felt appreciation for what you pros do.

You should get "The Cruiseship Cookbook"

What if you get the job and don't like it? Are you able to quit? What happens if you quit while the boat is still on the ocean?

Don't know about the job situation on the boats. I have a very nice, well paying position. I only cook as a hobby. 90% of what I do is over a gas grill. Just thought those guys did an excellent job. It gave me some inspiration to do better at home. Those guys work their butts off. With the exception of the executive chef, I don't think the pay is that great.

NO- not for the passengers, anyway. I've sailed on four lines and like Princess the best. We also took an Alaskan cruise in 2004 and loved it. Before boarding the Coral Princess we took a 5-day land tour. It was all spectacular!

Many years ago my brother worked briefly in the kitchen for Holland-America. He jumped ship because of unwelcome advances made by other crew members, but he also said the kitchen was like working in a war zone, day after day. He found starting his own restaurant to be less stressful (even with 100-hour weeks).
