Brown Sugar Spiced Shortbread:

1 1/4 cups all-purpose flour
3 tablespoons brown sugar
1 tablespoon white sugar
1/2 teaspoon ground cinnamon
1/2 cup butter

Mix dry, cut in butter. knead into a ball, roll out to 8 inch circle, cut into wedges, bake at 325 for 25 or until just set.

Fabulous.

Thank you Harpua! This looks very good, and also quite easy to make.

Have you used this for a crust for bars or for any other application?

No I haven't used it for anything else. What do you have in mind?

I've seen lemon bar recipes that use what amounts to a shortbread dough for the crust- also date bars, etc. Maybe I'll play with it a bit! Hmmm.. how about adding chopped, candied ginger?
