Wanted: Garlic Soup Recipe

After searching the site, the only recipes I found for garlic soup were ones I posted. Anyone got some interested varsions or variations on garlic soup?

My sickie soup:

Sweat some onion, celery, carrot in butter with a bit of salt. Add a whole head or 2 of garlic (separated and skinned). Throw in a bay leaf and thyme and stock to cover. Simmer until the garlic is soft. Discard bay leaf and twigs and puree with an immersion blender. Season with S&P and a bit of cayenne. Throw in some stale brown bread of croutons and let it sit for a minute to thicken. Stir in a couple of barely beaten eggs so it creates threads.

Very homey; I love it!

Shel, this one is from a French cookbook, Cuisines of the French Provinces in the section for the South East. I've never made it, but it's another one to try. Here's the translation:

Four garlic cloves
Four sage leaves
1.5 liters of water
salt, pepper
Slices of French country bread
2 tablespoons olive oil

Put the garlic, sage and water in a pot and bring it to a boil. Add the salt and pepper and allow to simmer 15 minutes. Remove the sage. Put the bread slices in the bottom of a soup turreen and drizzle them with olive oil. Add the broth and serve immediately.

Makes four servings.

Shel, in Chester Aaron's "The Great Garlic Book," he has several garlic soup recipes collected from various restaurants. Among them:

White Almond-Garlic Soup with Grapes, from Barcelona in San Francisco
Soup Lloyd J. Harris, from La Vielle Maison, in Truckee, California.
Spring Garlic Soup, from Olivetto, in Oakland.
Sopa de Ajo, from El Topil, in Oaxaca, Mexico.

Any of these might satisfy your desire for something different.

In "Garlic Garlic Garlic," Linda & Fred Griffith present 18 soup recipes based on garlic usage, including one I particularly like for Creamy Roasted Garlic Soup with Leeks & Potatoes.

In "The Gardener's Community Cookbook" there is a marvoulous "Garlic Lover's White Bean Soup."

These pique my interest ... I've eaten at Olivetto and La Vielle Maison, but don't recall therse items as being on the menu. Would love to see how the Sopa de Ajo compares to the version I have, and the White Almond-Garlic soup is 100% new all around.

Thanks for the suggestion. Just curious, what kind of bay leaves do you use? What do you mean by "brown bread?" It seems to mean different things to different people, depending on their location.

I guess whatever I have. Right now I have turkish bay leaves from Penzey's. I also have a fresh laurel tree outside, but I forget to pick them beforehand, and it just doesn't give as much flavor fresh.

I think a molasses bread would be good, or a whole wheat bread with a sweet note in it. I think it adds more flavor than a white or french bread, but that would work as well.
