Right now I'm looking at Hobarts up to 12 quarts that'll end up costing a couple of hundred more than the KA counterpart at much less capacity.

Don't quite follow you...

 

The largest K.A makes is a 6 qt.  Hobart has the 5 qt, and haven't seen a new 10 or 12 qt mixer in my life time--but have seen used ones, many of them. Problem with the 10 and 12 qts is getting bowls and agitators (whips, paddles, hooks), there just aren't many around

There are plenty of accessories for the 10/12 qt Hobarts offered on ebay.
