? about my Ciabata bread

Hello all!! I recently bought a loaf of Ciabata bread at my local grocery store, but it was nothing like the taste or texture of the Ciabata I make,
Mine has much more of a "chew to it" with holes in it... where as this one at the grocery looked like my ciabata bread , little bigger... but it's texture was soft and no holes in it........ much like a regular loaf of bread

so I was wondering am I doing something wrong with my Ciabata?, the thing is I like the chew to mine... i love it toasted with a piece of very old chedar on it ......... but maybe I am not making it properly

anyone have any suggestions ?

I concur. I have tried that store bought ciabatta and it is terrible. The word ciabatta means "old lady's shoe/slipper". So it should be ragged, tough/leathery, and full of holes!!!

And all of those chain restaurant sandwichs that are claiming to be on ciabatta.....it is giving ciabatta a bad name!
