Hello Everyone,

I am Carol, a "cook at home" in Virginia. I am married, have 6 cats and no kids, unless you count the furry ones! I love to cook any kind of food. Right now, I am learning how to take some of my favorite dishes and recreate them so that they are more healthy; as my husband and I are losing weight and want to continue that process. I have not been to any cooking schools, what I know I have learned from books and TV. I look forward to meeting the folks around here!

I am looking to cut calories and carbs from some of my favorite dishes like lasagna, mac n cheese and every other noodle in any form! I do a lot of grilling, but with winter approaching, I guess that will end! Boo Hoo! I like rice dishes and all kinds of broiled meats and most types of salads and vegetables. There are many things that I have never tried that seem a little exotic to me, so I guess I will have to be brave and experiment!

You're going to really enjoy being here, Carol. Try posting a question in the recipe forum about how to lighten a specific dish, and in what respect (carbs, sugar, etc.). It helps to be fairly specific in your queries.
