Cajun/Creole

Hi... Just wondered if anyone knew of any authentic Cajun or Creole recipes. I want to learn the "down home" stuff not too modified. Any help?

Authentic is no one thing. Every family cooks those things differently from every other family. Yet each is authentic.

I recommend getting some Paul Prudhomme books from your library and starting there. He's easy to follow and his results are decent.

Others will be along to provide their favorites.
