Tea in cooking?

Hi, I've not heard of using tea as amarinade, but you've got me curious ...

I sometimes use tea in which to cook rice. A jasmi.ne rice cooked in a green tea infusion can be nice. Do a Google search on Ochazuke.

I've cooked chicken using tea. Try a Google search on tea smoked chicken. If you can't find anything, let me know, and I'll post a recipe or two. There's also tea smoked duck ... and green tea ice cream is wonderful!

don't try this at home

This is not a recipe to try, it;s just a funny story. My parents immigrated from italy to boston with their parents when they were both kids (they met in the states). They had lots of stories of the strange things fellow-italian immigrants did about the strange foods. This was back in the 1920s and italians from rural villages (who were the ones immigrating most of the time) had never heard of tea. One guy decided that he would try it. They sold it in bulk in the store he shopped in and he bought a pound of it and brought it home. His wife boiled it up, drained it, and tried to serve it with salt and olive oil (as you would do with a green vegetable). Their conclusion was that americans were crazy and had lousy taste in food.

I have a cookbook from Celestial Seasonings, that I honestly haven't used

that much, just need to put it out front.
There is a recipe for Orange spice beef, marinated in orange spice tea, if you are interested, I will type it later.

I did a mango poached salmon one time and for the life of cann't remember where the recipe was? though it was this company, they had a mango tea, but can't find it?

I have an article somewhere on smoking with oolong tea; mushrooms to be exact.

I've also seen many recipes that include tea in meat rubs.

I read this and thought, what? do they roll it in cigarette papers or smoke it in a pipe?

I forgot about this one ....

I've not done anything with this recipe - not even read it verycarefully much less saved it to my recipe collection. However, here it is for you to enjoy or discard ....
