storing fresh pasta sheets

Thread Starter
hi everyone,

i would like to know what is the best way to store fresh pasta sheets after rolling it out. Should i cover it with a damp cloth to prevent it from drying out, or should i just wrap it up with cling film?

hope someone out there can help me.. thanks

Parchment paper between the sheets and cover with a damp cloth

Or roll it up using wax paper, then keep it in a sealed bag. Start with a piece of wax paper that's about 6" longer than the pasta sheet, set the pasta on it with most of the extra wax paper at one end, fold the extra over the dough and then roll from that end.

Yes, I agree with both of those techniques. That is how I do it myself.
