It can be made with beef, pork, chicken duck and even fish. It is made with fish sauce, lime, mint and chilli. The fish larb...I think called larb pla is totally stunning. There is a fish dish with peppercorns which I have eaten which was gastronomic heaven but larb pla (if that is the correct term) is a close second. This is a peasant dish created often at the roadside in Laos by wonderful smiling ladies. I guess some will think this is a recipe for stomach upset...well I can tell you it has never happened to me. Laos is a very strange and exiciting backwater for gastronomic adventures.
The chicken larb (or larb gai) and pork is often cooked. Larb is served with sticky rice.
Another Laotian wonder is a simple sounding grilled chciken on a stick (can't recall the name) it is marinated in coconut milk and goodness knows what else.
