Large Pumpkins

When shopping Saturday, one of the stores was giving away free pumpkins. Nothing would do for my daughter but she just had to have one. She and her brother had already carved jack-o-lanterns so not sure why she wanted it so badly. Anyway, I hate to let things go to waste if there's a use for them. Carving pumpkins seems a waste to me because there's nothing you can use that for except compost in the farmer's field next to us. lol

Any suggestions or is this one just doomed to remain a fall decoration at the base of my steps?

Although jackolantern pumpkins tend to be stringy, they're still usefull for all sorts of dishes; from stews to breads (both quick & yeast) and muffins. And, of course, the seeds are a great treat.

I would break down the pumpkin, separating out the seeds and stringy membrane. Roast the pumpkin until very soft, then scrape the flesh from the skin and put this puree up in recipe sized amounts in the freezer.

Most recipes call for a cup or a cup & a half of puree.

Depending on quantity, you could also make some pumpkin butter.

MMM! Pumpkin butter sounds really good! I've never had it but have seen it mentioned in the past. I'd love a recipe!

I have used a bigger pumpkin to make pies in the past but found the smaller ones were better for it. That's the only thing besides roasting the seeds that I've tried using pumpkin.
