hi everyone. I am a line cook at an italian cafe. my background is in audio
electronics but I burned out after 12 years. I was a line cook in college so I went back to it a few years ago. doing electronics for so long it was natural for me to refer to the "schematics" of cooking, so I am a Harold McGee nut. I read through all the threads last night, I have alot to say about not boiling ribs or having trouble with gnocchi, but its all McGee stuff anyway. I don't have a refined palate, don't have original dishes
I make gnocchi everyday ,they are .........almost perfect
