coconut chicken curry

Hi,
I was wandering if anybody knows a good coconut curry recipe that is not very spicy. I know it has to be hot because of the curry paste in it, but maybe there is a way to reduce the level of heat during cooking or something. I always love the curry dishes when I go to restaurants, but never can recreate them at home with the desire result.

Hello, i also love curries. I am too lazy too make my own thai pastes and as I live in Oregon, not may Kaffir leaves or guginol show up here.

So the easy way to make thai curry is to buy any of the thai curry pastes that mae ploy and others make. There are red,green,yellow, maasaman and jungle curry pastes availible at my asain market. My experiance is that yelow is usually the mildest. Basicaly, the curry paste is like a soup base, with cocunut milk or stock providing the liquids. most thai joints use these exact pastes.

you can google thai curry paste to get recipes and ratios, i hoped this helped somewhat.
