Cooking ahead for a surprise party

I'm hosting a surprise party for my fiance this weekend (Dec 8th) and am serving baked potatoes. I know that I can make these ahead and store them in an insulated cooler and they will be warmish. Is it possible/advisable to cook them partially and finish the cooking immediately before serving so that they will be piping hot. If so how would I go about this. The party is small (only about 15 guests) so space in the oven isn't an issue. Thanks for any advice.

Why don't you just boil them for 30 mins and then finish in the oven on the day of the party. You could also do twice baked potatoes and just prepare the filling 3 days prior.

id do the twice baked stylee... this way you can flavor the filling any way you want. Ex. - cheddar and bacon, sour cream and chive or do all 4 together lol.. but i think doing twice baked makes it more eye appealing as well..

Please don't boil them and bake them.

I would suggest you parbake them, and when you're ready to put them back in the oven, brush them with a little oil or butter, sprinkle with kosher salt and fresh cracked pepper, and toss them in there at 425F.
