Italian Wedding Soup

Here is the recipe that I've saved for about 20 years, I finally found it..:bounce:

Meatballs:
1/2 pound Lean ground beef
1/4 pound sausage
1 egg
1/2 onion grated
1 small clove garlic, pressed
1/4 tsp oregano
salt and peper to taste
1/4 tsp basil
1 tsp fresh chopped parsley
1/2 cup grated parm cheese

Mix all ingredients together and roll into 1/2 " balls, when they are rolled, drop a few at a time into 1 1/2 quart boiling chicken broth. Cook for 10 minutes ,Save in broth and set aside.

Soup:
In a 4-6 quart soup pot, saute:

1 med onion, chopped
2 to 3 garlic cloves, chopped

Add:
2 quarts Chicken broth and bring to a boil

Add:
1 bunch of escarole, finely chopped and cook for 10 minutes or until escarole is done.

Add:
Meatbals and the saved broth, cook another 5 minutes, serve with grated parm cheese

soudns good. I lvoe Italian wedding soup. I think im goign to have to try it some time soon.

I did state the recipe is over 20 years old, so something WAS missing..lol

the itty bitty pasta..don't know what it's called!! I think it's ORZO pasta...but I went into google to check on the pasta and I found just as many recipes with as without the pasta..some even adding beans ...and all kinds of things.

I guess you find a recipe that you like, make it...then tweek it to your tastes and run with it..lol
