Well I started making new desserts at work for the menu, and now they want it for our holiday parties.....:suprise:
I was curious if any of yall pastry chefs have a recipe for cheesecake, that bakes easily in a full size hotel pan. The flavor is ginger, so it has crystalized ginger in the batter, and ginger snap crumbs for the base. So I really just need a recipe for a plain cheesecake batter, and any tips you have for baking it nicely in a full sized hotel pan (or other suggestion)
