Birthday Cake for Diabetics

Hi Everybody,

My parnts anniversary is today and my moms birthday is Sunday. My dad is diabetic and my mom is pre-diabetic. They are both watching their carbs and I want to make a cake for them. I need your help as to what to do. My mom is particularly fond of ice cream cakes. I'd norbally go to DQ and get one but I don't think that would work out too well.

Splenda? Apple Sauce?

How about you make a light sponge cake replacing the sugar with measure for measure splenda or equal?
Than get sugar free ice cream and make your own sugar free ice cream cake!!!

Decorate with beautiful flowers (washed) or fresh berries and splenda or equal or unsweetened whipped cream.

Diabedics deserve beautiful cakes too!


Now, if you are really into it and are working with the doctors, you could use different types of sugars that may be better tolorated. More complex or even work with apple sauce, prune butter and natural fruit sugars. :bounce:

That's an AWESOME idea.:bounce: One problem, I've never made an ice cream cake before. Have any helpful hints?

quick put together

bake your cake, let cool and turn out of pan to cool.
line the pan with plactic wrap.
soften the ice cream either by placing for a few seconds in the microwave or just let set out on the counter for a while.
cut in half your cake and place in the lined pan
put the ice cream on top and smooth
top with second piece of cake and freeze to set a few hours
to serve, whip cream and ice, decorate with fruit or flowers and serve!

that was really fast but pretty well what a BASIC ice cream cake can be!

you can add sugar free chocolate sauce or berry sauce.

Go to town and have a great time! The are going to love that you took the time to think of them and care enough to taylor a dish for their celebration.:bounce:
