maybe a ginger crusted sweet potato baked cheese cake...using ginger snaps as the crust...some extra ground ginger in the crust...and some kind of ginger grated on top just befor serving...thats where im stuck...what type of ginger would be nice as a light grated topping..its important that the flavors not blend together on the palate to much....want the separate taste buds going on..:chef: is there a ginger that can be zest on top and then flamed a bit? ty:rolleyes:

okay
try this on for size:"Parfait" or "Sundae" of ginger snap cookies with sweet potato cheese cake ice cream topped with dark chocolate and coconut cream sauce and candied ginger strips.
want to go little crazy? add some soft young coconut cubes and basil,
or a few drops o kaffir lime syrup.

what about
what about mixing the sweet potato with some matcha (green tea)or having spirals of a sauce made with lemongrass, cyrstallised ginger palm sugar
or mixing a little five spice with coconut cream and simmer the sweet potato in it when cooking it,
or using fresh lime juice with the sweet potato , and grated coconut on a crushed oreo cookie base , then drizzled with bitter sweet good quality chocolate and serve it with a small ball of coconut (nondairy i can give you a great recipe if you need it) icecream and candied lime peel as a garnish
just had another thought , what about making sweet potato fritters ....thinly slice sweet potato , make a batter like tempura, coat the sweet potato in the batter , deep fry till golden brown and serve with a ginger and lemongrass icecream and a drizzle of ginger syrup infused with cardamon over the top
