:crazy:hiya i have recently used meat of a whole duck.. just wondering what can i do with the left over fats n n bones..there is still tiny bit of meat still on it bud not worth fukn about with..too fidly..? please help me..:confused:

Hi and welcome to cheftalk! I would roast the bones with mirepoix and make a quick stock out of the bones. It can be used to braise the legs or make a sauce should you choose.thanx for the response to my duck issue...

Whenever I have duck at home, not very often anymore, I try and remove as much of the fatty deposits that I can. I will then freeze them until I have a bunch and then render it, leaving me with a bunch of duck fat, to freeze and use as I please. That leaves me with one of my all time favorite treats...duck cracklings. Man, I can hear my arteries hardening just at the thought of them!!!
