I don't use half and half regularly. Every now and then, I try a recipe that calls for it and it's never a full container just a half cup or so. I hate buying things and ending up wasting part of it so I tried freezing some half and half. When I defrosted it to use, it was lumpy. I shook it up and it seemed to liquify more. Since I was already midway into the recipe, it was too late to turn back or run the 13 miles to the store. I used it and it worked out well.

In future, is there a good way to freeze it? What should I do when defrosting to keep it from separating which is what it appears happend this time?
