Midwest Folk huh? The most familiar fish to midwest folk is Lake Superior Whitfish (it actually comes from any of the Great Lakes)...good Whitefish is not fishy and priced at the bottom of the list. Walleye and Lake Trout are other good midwest fish...both have good oil content and are excellent grilled, baked or sauted.

If midwest fish isn't your flavor, one of the most accepted fish by American customers is halibut. Let me know if I can be of further assistance.

I would give a thumbs up on the halibut, but whatever you serve make sure it is very fresh and don't over cook it.

SHRIMP!!!!My gosh shrimp are the quintessenal Midwest seafood. Absolutely when they turn their noses up at calamari they'll go for shrimp. Fish~Salmon. Go figure.

I've lived in the midwest most of my life and there are more people here who enjoy seafood than you think.

Be adventurous!!! If they are visiting from so far away, give them a selection. Batter fried calamari is always a hit here. I have never seen anything fly off a plate until we entertained with them. Simple and fast.

If you can find fresh octopus, slice a leg up into thin medalians so it doesn't so much resemble the whole. I haven't met anyone who didn't like it.

Shrimp is too easy, are you telling me they've never had shrimp in this day and age? Where are they from?

Most people in the MW tend to like clams, another choice for you. I would also add some "california rolls" with crab meat in the center. Another dish that won't leave left overs....
