I bought one of these just for making osso buco. I found myself using it for a lot more than just that. I make tomato sauce in it, chili, any excuse I have to bust it out, I do. I absolutely...
I have always loved Indian food but like many who have never travelled to india itself i have often wondered how authentic the Indian food i have eaten actually is. This book has convinced...
I've owned one of these for over 3 years now, using it daily. I've never had to sharpen (grind) it, just an occasional run along a fine steel, and it's held a wonderful edge for everyday prep....
I purchased my first Smart grinder nine months ago. I was thrilled with it and thought I had found the perfect grinder for a French press grind that would change settings quick and...
i want to attempt to make some homemade flour tortillas. i have never made them, do you use a press or do you roll them out? have any tips for me? i think i can find a recipe online unless someone wants to share theirs.. thanks guys!
I use a press for the corn tortillas and flour works in a similar way (although there's certainly more resistance in a flour tortilla). If you don't have a tortilla press use a heavy butcher block or flat dinner plate with a weight on top and simply press down on the ball of tortilla dough as you would a corn tortilla, of course with the ball of tortilla dough being layered by two sheets of plastic, wax paper or parchment..
Corn tortillas are the best. Personally, you can do either way just depends on what you want. I just form them by hand. In my travels in Latin America the torillas I had were small (about the size of the palm of your hand) and a little bit thicker, and everyone I saw was just forming them by hand. Have fun. Fresh torillas are the best.
Buy the press.....make sure to line it when you flatten your masa out.
I use a large ziploc bag cut down the seams. For flour tortillas a rolling
pin works pretty well. Just make sure not to over work your dough and let
it rest a little before working it.....good luck
