do any of you talented folks have a tried and true recipe for easy, hot appetizers that can be held in a commercial food warmer (water bath) for an extended period of time (3-5 hours) without breaking down? i was thinking that perhaps small meatballs in an exciting sauce might work very well, that the holding time would allow for additional simmering and flavor. how about any hot vegetable recipes that would hold up, perhaps an interesting recipe that included corn on the cob? any suggestions would be greatly appreciated.

This book has lots of great appetizer ideas and will help steer you away from the temptation to purchase processd/packaged, THE BIG BOOK OF APPETIZERS

how fancy is the food to be?hot chicken wings(maybe curried), small pork ribs(riblets), mini burritos/qusadillas, hot dips such as spinach-artichoke or hot crab dip, chipotle spiced cheese fondue(dipping foods separate..i like it with skewers of scallions and shrimp) or what about foods that can be served at room temp such as mini quiches, artichoke-cheese nibbles, or onion tart squares, polenta bruschetta, tricolor vegetable pate, smoked salmon cheesecake, appetizer cheesecake(3 layer ) brie truffles..i am not familar with the appetizer book mentioned, but have heard of it several times..bet they have some goodies in there! how many guests? you should be replenishing the foods throughout the party, not planning on 'keeping' the same food in the chafer for hours
