Just joined your forum & wanted to say hello to everyone. I have been cooking professionally since about '92. Did the career change thing, went to George Brown College in Toronto, Ontario. Although I completed everything & have been cooking ever since I have yet to write my exam for actual certification...ended up buying a Restaurant in rural Manitoba & have never had time to write it! I worked for a time at On The Twenty Restaurant in the Niagara Region in Ontario...at the time it was one of the top 100 restaurants in North America.
