That is exactly what I thought........until I tried it!
The problem is that ice cream freezes the cookie to the point that the cookie is as hard as rock and almost impossible to eat.

have you ever used eggo waffles to sandwich the ice cream..... YUM!
ps. you know the traditional ice cream sandwiches with the dark black cookie.? well, they say that they keep them frozen for a while and the moisture softens the cookies. or something like that. hmm.

You can just put icecream between two chocolate chip cookies the trick is to make sure the ice cream is soft enough.
It is always best with fresh made icecream that is still slightly runny. But you can also just buy icecream and soften it until it is spreadable. Make sandwiches and then re-freeze.

The chocolate "cookies" used in commercially made ice cream sandwiches are a bit soft, kind of caky. Maybe a rich cake or brownie batter would work better? The extra fat would keep it softer.
