I purchased a big bag of raw beans and stuff today at the farmers market: peanuts, mung, garbanzo, black eye, green peas, etc. I want to use them in a salad, so I'm looking for ideas.
Right now I'm considering adding them to a shredded red & green cabbage mix with a miso dressing and some smoke tofu and julienne carrots. I'm not sure if the raw mix complements this type of salad or not. The other option was to use baby spinach. Please share your thoughts.
