Hi There,

My husbands birthday is this weekend ahd I want to make him Panko Crusted Pork Loin. I'm pretty good at baking but I suck at cooking. My first question would be: Would a red pepper sauce drizzled over the top of the pok loin be good? Second: If so then how do I make a suce for the pork? Any and all help would be greatly appreciated.

TIA,
Kelley

I KIND of made something like this last night. I made coconut and panko pork, and I made a jalapeno sauce.

Here is what I did, however, take it with a grain of salt as I've only been really cooking since the beginning of the year.

I put chopped ginger garlic and poblano pepper in a sauce pot and cooked until a little soft, about 3 minutes, then I added coconut milk and reduced, then let sit to room temp, added celantro and hit it with the stick blender.

THAT was for the coconut dish, if you want to use red peppers, using red peppers, garlic in a sauce pot, maybe add some crushed tomatos, then reduce, then hit it up with a blender....maybe add some fresh basil to it before hand? salt pepper to taste.

again, this is just thinking in my VERY amature head, i'd hope that you hear from a real chef before taking my advice!

for the pork below, i bought boneless chops, thin cut and pounded them to almost 1/4 inch, put a little corn starch in a bowl with maybe some sugar i think and some cayenne pepper, battered in that, then coconut milk, then a 50/50 mix of panko and UNsweetened coconut flakes before frying (although I guess you could bake too)

this little piggy...

i have a red chile gravy recipe that i think would be good with your pork loin if you would like the recipe..personally, i prefer pork tenderloin to regular pork loin..it is much more tender and pretty darn easy to cook..its great grilled, or you can grill it and finish it in the oven or just roast it..any sauce with pork is good from fruited ones to spicy to port based, but my personal favorites are pork tenderloin with either an orange chipotle sauce, roasted raspberry chipotle sauce or spice rubbed with a grilled fruit salsa( pineapple, peach etc.)

Mmmm raspberry chipotle sounds like a better plan to me!
