One or Two pot dishes...

Hey All,

I am looking for some new recipes to try that are large one or two pot dishes. I have found some rocking recipes already so far on here, but am curious to see what other ideas you might have that you enjoy. I'm just a home cook that finds it easier to cook one-pot meals that I can freeze and eat for the week - any ideas? I've done stews, pot-pies, soups, and shepards pies already. Looking for any ideas really, I'm not a picky eater, just nothing that requires too exotic of a spice as I might not be able to get it where I live (though I will try!).

A while back I posted a recipe for a beef and cherry stew, one I like to make from time to time. For a recent gathering of our fortnightly dinner hike group I made a chicken - habanero chili that was well recieved. I also like to make a black bean and lamb chili, or black eyed peas and ham hocks. Braised pork and sauerkraut? Or do a slow roasted pork shoulder and have pulled pork sandwiches, enchiladas, chile verde, etc.

How about various varieties of quiche, like bacon, leek and mushroom, or chicken tarragon, or shrimp and crab?

If you like rice, there are a lot of types of pulao and biryani. These take a big pot for rice and a fry pan, generally.

There's a thread that I started a while ago about crockpot ideas. Takes only one pot and is very low maintenance.
