Looking for a Killer Jerk chicken recipe

Ever had that one something that left a long impression on your pallet and no matter how hard you try, you just can’t recreate that flavor? Here’s the story while in collage in Florida I worked at this restaurant and I remember this Jamaican server named Al was throwing this huge get together for the whole restaurant at his house. When I showed up I remember smelling this sweet and smoky aroma in the air. I asked him what it was he said “It’s my jerk chicken mon”. The taste was out of this world. I even tried to ask him for the recipe, I even told him that I would pay. He kept telling me the same thing “I don’t know mon. I put a little bit of this and a little bit of that”. When came back to Hawaii I tried to make Jerk chicken but it never came out the way I remember it. Any tips, recipes or if Al is out their “Hook me up”. :chef:

not really a recipe - but I like the Walkerswood brand of jerk seasoning/marinade.

The best store-bought jerk marinade I've had was from the gone but not forgotten Miss Pearl's Jam House in San Francisco. Sigh. These days the stuff sold in stores has high fructose corn syrup as one of the leading ingredients. That just ain't right, I tell ya!

The summer grilling and smoking season is arriving here in Utah, perhaps some experiments in jerking are in order.
