3 to 4 small zucchini or yellow crookneck squash cut into 1 inch cubes or just sliced lengthwise in half
2 Tbsp. olive oil
1 tsp. sea salt
1 tsp. mince basil, marjoram or thyme
4 to 5 sprigs parsley mince
1 to 3 cloves garlic, crushed and mince (optional)
Fresh ground black pepper to taste (optional)

Sprinkle squash with herbs, sea salt and olive oil. Let sit 1 to 2 hours . Place squash on skewers. Pack close . Grill 10 to 15 minutes until squash is just tender and crispy brown. Serve hot or cold.
