Thai Hot Wings anyone??

Near where I live there is a restaurant called Coconut Bay. It's a Thai restaurant i think. Not exactly Chinese but not exactly Thai. Anywayz..they have these SUPER TASTY hot wings that are coated in a dark burgundy almost brown sauce that's both sweet and spicy. I have a tasty recipe for asian wings and figured out the sweet part but don't know what could make it spicy and give it that dark color. Does anyone have any ideas? Also their wings are so cripsy the coating doesnt make the wings soggy..any tips? I've tried the basic improvements like hot hot oil and stuff..but ??

You're probably looking for more of a Red Thai paste.

Is that what it's called? Red Thai Paste? or is it one of those things that you just have to roam the aisles of an ethinic market to guesstimate? :lol:

It might be red Thai curry paste that provides the spice, but red curry isn't one of the hottest. Without tasting one of these morsels myself, hard to say. The sweet syrupiness ( Is that a real word? ) might come from a mix of brown sugar or molasses and soy sauce or ponzu, a citrus flavored soy sauce, or even just a regular white sugar and water syrup mixed with some sort of soy, maybe a splash of fish sauce? I'm not a big fan of the various types of hot, sticky sweet sauces one often finds in Asian and barbecue venues, I prefer more pungent, vinegar based stuff with little, if any, extra sweetness and sugar.

Sorry, no help on the crispness of the wings. They do sound good, though.

My aunt gave my a recipe that she calls "sticky chicken" Take the wings salt pepper and put Lawry's seasoning salt then dredge them in cornstarch and fry. For the sauce it's sauteed onions and garlice, korean corn syrup (as opposed to the american kind) soy sauce and vietnamese chili paste (siracha the one with the red pepper flakes in them) so mayb if i add the red thai curry paste then THAT WILL BE SUCCESS!:D

You're almost certainly looking for a "Sweet Chili Sauce," and the most common brand used in restaurants is called Mae Ploy. Another good brand, a bit less sweet than Mae Ploy, is Mae Pranom. This type of sauce popular on street food in Thailand and Vietnam. IIRC the sweet component is palm sugar. Go ahead and google "mae ploy sweet chili" to see if it looks like what you want.

If you're in the greater LA area there are a lot of Thai, Vietnamese and generic Asian stores selling it. If you haven't been to one of the two biggest Vien Dong III Superfood Warehouse stores, you don't know what you're missing. An absolutely incredible place. Tied with Santa Monica Fish Market for best fish in SoCal, too.

After you've nailed your sauce, I'd just fry the wings until they're crisp. Here's a tip on frying wings: Get them very dry first, and they don't need corn starch. In fact, they'll crisp better without it.
