Homemade Ramen

After watching this deliciously satirical Japanese comedy called Tampopo, I had a craving for ramen and a piqued interest in making my own - from scratch! And I had a perfect stack of my favorite Shin Ramyun instant noodles to satisfy my cravings too :P

I use made my broth base boiling 4 chicken carcasses, bonito flakes and bulb of garlic and then I season it with miso and a bit of shoyu. It was really good but I know there is more room for improvement for my broth. I want to make it as clear as consomme eventually, any tips on that? :)

Unfortunately, I cannot post pics of the ramen I made here (yet). Has anyone made their own ramen before? What is your favorite instant ramen? :)

A consomme is made clear by creating a raft of chopped meat, to suck up any of the cloudiness.
