One of best books I have ever seen on buffets was written by George K Waldner
It has techniques and pictures of themed, modern and classical buffets. It was written in the 60s or early 70s. George was the Gard'e Manger instructor at city tech in New York and The CIA. Put his name into search engine and books availability will come up.

I remember Ron Yudd was well known for his book on buffets, but don't seem to find anything googling. Maybe Amazon?
