Sauce question

If I have made a white sauce with the three ingredients being butter, flour and cream......will the sauce last in a container in the refrigerator as long as the expiration date on the cream? I ask since the cream has the soonest expiration date.

Or does the fact that it was 'cooked' change the life span of the food before going bad?

The short answer is no. It may last longer or it may last less. Once any container is opened, and therefore exposed to air, any expiration or use by dates are invalid.

To some extent refrigeration temperatures will affect product longevity. Further exposure to air and warmer temperatures will also affect the product longevity.
