This evening a whipped up a simple garbanzo bean dish:

Kicked Up Garbanzo Beans
1 can rinsed, drained, and dried garbanzo beans (Eden or Whole Foods preferred)
1 or 2 chipotles in adobo sauce, minced fine, plus some sauce
Ground cumin to taste (abt 1 tsp, maybe more)
1 tsp dried Mexican Oregano
1/4 tsp red chile flakes (de Arbol, commercial brand, whatever you like) or cayenne
½ tsp favorite prepared chile powder (no salt)
1 red or orange gypsy pepper, diced or small red or orange bell pepper, diced
1 small red onion or shallot, diced
A little bit of evoo
a little bit of cider or sherry vinegar
S&P to taste
mix all together

This was pretty good, but it seemed to be missing something. Any suggestions what else could be added?
