Celebrity chef on location???

How common is it for a celebrity chef to be at the restaurant(s) they own? For example, if I went to Bibba(I think that is owned by Mario Batali) would he most likely be there or would be highly unlikely for him to be there?

Well a quick check of Googleland and it is Babbo not Bibba-- is there a dunce cap smilie for me :D

I would say depends on the chef. Back when Marco Pierre White was actually cooking and had his Michelin Stars he claimed to have been in the kitchen practically the whole time. On the other hand you have Wolfgang Puck with his dozens of various outlets, chains, restaurants, books, TV appearances, etc. In that case I seriously doubt he spends much time at his restaurants (even Spago) and is preoccupied with other stuff. As for Mario Batali, who knows? But you should know that he's been a TV personality for a long time and that most of the more mundane kitchen duties that a chef has to contend with have been handled by his extremely capable and competent chef de cuisines, sous chefs and cooks for years in his various restaurants. However, at that point in the game they might start to do more work in the front of the house, smoozing with guests, signing autographs or what not. I'm not a celebrity chef, I don't know what they do during the course of a year and I can only guess.

A buddy of mine did his intership ata jean george place. and over the few mnths he was there. he never saw him.

I had him ask the chef there becuase I was wondering the same thing. only a few people there ever saw him let alone talked to him. and there was an endless chain of people who were trained by people who were trained by who until you finally got the guy who was jean georges sous chef

six, ten, twenty establishments. . . .

been to any number of "names" - for example Mesa Grill (Bobby Flay) - the waitress said she opened the place, that was (then) two years ago, Bobby Flay was there when it opened and has not been seen since . . .

(oh, I don't recommend it - very good pepper sauces but the rest is quite ordinary. hugely overpriced - no "value" involved.)
