Was curious if anyone here has any experience with ventless hoods? I'm looking at a location for a new restaurant where a ventless hood would be my ONLY option if I want to build out a kitchen.

If you have used them, how do you like them?
Is it true that you cannot use gas stoves?
Is the maintenance complicated?
Other then the purchase and installation, what other costs should I know about?
Any other general advice in regards to them?
