Rhubarb!

Hi all,

Does anyone have any tasty suggestions for rhubarb? I thought about good ol' rhubarb pie, but I don't have butter/margarine for the pie crust. Anything else I can do with it?

My favorite, other than adding it to various fruit pies, is simply stewing it. Cut the stalks into 1/2 inch chunks and put into a saucepan, add enough water to come up 1/2 to 2/3 to the top of the rhubarb. Bring to a simmer, add a couple tablespoons of sugar. Simmer until the rhubarb is falling apart into a stringy, syrupy mess, on the order of 20 - 30 minutes. You may need to add more water along the way, depending on the moisture content of your stalks, probably more sugar to taste. That stuff can be pretty tart!

Make a rhubarb fool, make rhubarb jam, make a rhubarb sauce and use as a topping for icecream.

I was going to suggest rhubarb crisp, but then I remembered it calls for butter or margarine. Maybe you need to go shopping.

thanks for the suggestions!
i ended up making zucchini bread instead yesterday. go figure...
i think i might go for the rhubarb pie tomorrow (yay butter)!

Rhubarb bread is great, same recipe for muffins (hmm.... I have a bag of rhubarb in the freezer...), pancakes and waffles with some that was stewed as suggested. I stew it, strain it to lose the fiber, reduce it into rhubarb syrup for pancakes.
