In search of shredded ckn for burritos

I’m looking for a good recipe for spicy shredded chicken to fill burritos. Maybe slow cooked chicken breasts cooked in chicken broth so they have a little sauce? Does anyone have a favorite recipe to share? I’d also be interested to see any favorite burrito or taco meat recipes. Thanks!

I poach breasts and thighs together in chicken stock with a scoop of cumin, a pinch of red pepper flakes, and a scoop of fresh coriander.

One of my favorites for tacos, enchiladas and such is a citrus simmered pork, not quite carnitas. It is pretty easy, though it does take some time.

Roughly cube about 2 pounds of pork shoulder, usually some nice slabs off a boston butt or some boneless country style 'ribs' Don't worry about uniformity of size or chunks of fat, these are going to cook a while. The chunks will break down and the fat will help with the final crisping.

Put the pork pieces into a skillet or pan, one that has a reasonably tight fitting lid. Peel and halve 3 - 4 cloves of garlic, toss onto the pork. Sprinkle with a few healthy pinches of kosher salt. Pour in enough orange juice to barely cover the pork. Put the lid on, bring to a simmer, and let it go for a couple of hours. Stir it every now and then.

When most of the orange juice is gone and the pork is getting tender and falling apart, remove the lid, increase the heat to medium. Stir frequently, breaking up the chunks of meat as you go. The orange juice will cook off, the residual fat from the pork will start to crisp up the shreds of meat and you'll end up with a pan full of goodness.

Hmm, I bet a similar technique would work with chicken for those who don't eat pork. And a duck carnita enchilada might be quite interesting!

Try Mole'. It is my all time favorite way to eat chicken. I have made my own from scratch, but in a pinch, the jars are really very good. Look for them in the hispanic foods section of most grocery stores. Just follow the directions on the jar of Mole' paste, and use thighs for more flavorful finished product.


The other way I would go would be a quick marinade in lime, beer, cilantro brown sugar, salt, and chilis. After the chicken has marinated, cook on a hot grill to get some flavor into the thighs or breasts, and then pull them apart with your hands to shred for tacos/burritos.

This looks delicious! I'm going to try it in the pressure cooker. Instead of several hours, the first-stage cooking time should be reduced to 30 to 40 minutes. I'll let you know how it turns out. :)

Thank you, all of these sound so good! I think I'll try the citrus chicken this week.

geese4u- What exactly is Mole'? I've never heard of it. I'm extremely sensitive to msg so I avoid just about everything processed and packaged. Do you have the recipe you use when you make it from scratch?
