What's your favorite fish?

Hey there friends,

I'm new here but I really like this forum. So I thought I'd chime in with an easy one. My favorite fish is tuna - pan seared rare.

What's your favorite fish? And how would you like that prepared?

North Sea Haddock in a light crispy batter served with chips deep fried in beef dripping and a serving of mushy peas. Preferably sat in Ernie Becketts in Cleethorpes!:smiles:

Several species of wild Alaskan salmon lightly poached in a simple fumet (which varies by mood and what ingredients are on hand) with the interior of the fish cooked rare, and maybe even with a little rawness. Fish must be very fresh - I like it served with no sauce or dressing other than a litlle lemon. I want to taste just the fish. Sometimes I'll prepare the fish en Papillote. again with just a light addition of herbs and some liquid.

Frying up some nice, fresh sand dabs is always a treat ...

Grilled tuna, raw on the inside and with a nice, crusty exterior (some wasabi is very nice) is a great treat.

Halibut, then shark, then swordfish, then the various common whitefish. Certainly tuna is that mix somewhere too.

Fresh caught Minnesota walleye with a simple s&p and flour breading. Pan fried in the bacon fat from breakfast. Same recipe for northern pike. It is a toss up to which fish I like better.

From sea slugs to o-toro, I have one rule when it comes to seafood. I like it.

My favorite is mediterranean sea bass chargrilled whole, then carefully laid open, deboned, and dressed with lemonette.

My other favorite is salmon sushi.

7 gill shark, Sword fish blue or black, Sturgeon,Monkfish, Sheephead, Tuna...In that order

Are we only allowed one favorite?

Ahi tuna seasoned and seared on the outside and raw on the inside.

Halibut just about any way.

Cod.

Yellowfin for sushi.

Salmon in many different ways.

Brook trout just caught.

I don't have measurements.

Sautee some white onion in butter 'til clear. Add some chunks of halibut and chopped fresh garlic. Cook until the halibut is just barely done or almost there.

In a sauce pan simmer cubed potatoes in whole milk with a couple of bay leaves. When the potatoes are almost done, add the halibut and all. Grate some black pepper on it and simmer a few minutes. Add salt to taste. It's simple but delicious.

fresh nz schnapper coated in a little flour and panfried in butter with wedges of lemon and a sprinkling of black pepper served with a abig green salad and fresh croutons and roasted tomatoes

A schnapper is a schort of bream schwimming around North Island thatsch had one too many beersch.

nah thats just the fishermen , these fish dont need beer to have a good time , they hang around in schools dont ya know :crazy::crazy::crazy:

(Like you've never heard THAT one before!)


My three favorite forms at the moment are:

  • raw slabs of tuna with the right amount of wasabi and soy sauce
  • tea cured salmon with homemade sesame - chile mayo
  • breaded and fried filets of cod, golden brown and delicious.


Of course, that leaves out garlic-lemon shrimp with diced fresh tomato and pancetta over pasta, bacon wrapped scallops seared over mesquite coals, a zesty cioppino, crab legs with a bearnaise dip, [ I prefer crab over lobster ] Mrs. Pauls fish sticks fresh out of the microwave ( just seeing if anyone is still awake :lol:)

I got to say I am more a fan of sauteing than grilling when it comes to fish and seafood in general. Get a real nice sear and finish in the oven. Simple beurre blanc or just S&P and lemon juice. Buy the freshest available and don't mess with it.

:bounce: Hi all, thank you for all the replies...I am jumping for joy! It looks like this is going to be a great group.

I save my occasional yellowfin tuna eating for eating raw as sushi, tartar and seared!! I really like most fish and seafood as long as it is super fresh and cooked well. Either at a reputable Restaurant or when I cook it.

I am a Green Chef so I do watch out for farme raised imposters and the ones becomming extinct from over fishing!

BDL I'm seriously asking, how can anyone actually like sea slugs. I ate one by accident. It was dark. I was enjoying a hot pot in singapore and i cooked the most digusting thing i ever had in my mouth.

Anyway I'm going through a scallop phase. I'm loving them simply seared. Mushroom cream sauce or pea puree to accompany. Basic i know but yum!
Or Sauted scallop corrals on toast
or fried herring roes on toast

Just thought of my all time favourite and its local. Arbroath smokies. Arbroath is on the east coast of Scotland and there they smoke the haddock in pairs and to eat one warm straight from the smoker is a true delight

BDL. Thought you would get a kick out of this;
Sysco Corp Florida. just settled a class action suit with the Florida Attorney Gen. to cease selling frozen fish to 17 rest. in Tampa area and calling it Grouper when in fact a lab. has determined that it is not. They are forced to donate $100,000. to local food bank. (maybe they will donate the fish they havn't sold) and other fines as well.

Ooo scallops are one of my new obsessions too. I do them the Gordon Ramsay way: Get nice tight scallops, and slice them thinly in half so that you have 2 scallop patties. Season them with salt, pepper, and a little bit of curry powder and sear them in a hot pan. Serve with a tiny amount of raisin puree.

here fishy fishy...

you know i'm on the seafood diet...i see food and i eat it!..i'll eat just about anything from the ocean, prepared any way, with the exception of eel, baracuda and sea urchins...nasty, nasty sea creatures..my all time favorite seafoods, although technically not fish are stone crab claws, maryland blue crabs, conch and abalone...hands down, lobster is the winner in my world! not a big fan of mackerel or oily fish..love marlin..smoked is better..and when i catch a trout here, its great sushimi style. a million years ago when i was a poor sailor girl, living on a sailboat in the caribbean, we would go out and pick whelks off the rocks at low tide and pretend they were escargot..dove for conch,lobster, speared grouper and caught endless amounts of dorado(mahi mahi)... from the boat to the frying pan..don't get much fresher or better than that!...love flying fish sandwiches and real conch fritters...sorry if i've strayed off point..its all too good not to mention..now i want some

My tastes change with my mood, but I did really enjoy the Tazmanian Salmon I used for my demo.
Beautiful stuff.
The Honolulu Fish Company looks to have a nice variety of quality product in addition to the Taz Salmon.
I wish I was in a position to charge the appropriate price to bring their stuff in.

My favorites are:
Sea Bass
Tuna - cooked well done
Black Grouper - little olive oil, capers, baby bellas, green onion,touch of lemon juice.

Salmon, broiled, with a lemon buerre blanc. The fillets where the thin side gets a little crispy, that's the good stuff. My girls, 8 and 5, love salmon. Even here in the Midwest I make this about every other week.
