I feel stupid asking this, but I have this cookie recipe that calls for "melted dark chocolate"; what exactly do they mean? Unsweetened chocolate baking squares? Some other bar? Why can't cook books specify?

I would assume that they mean a bittersweet or semisweet chocolate. Usually, recipes specify "unsweetened chocolate."
It can be frustrating. Analyze the recipe for sugar content, and then plan accordingly.
