Wasabi Mayo

Hi,

I had wasabi mayo on seared tuna once and it was great. I tried making it myself by mixing some wasabi paste with mayo and throwing in the fridge. The next day the mayo had "broken down" and was watery.

Is this an expected chemical reaction with the wasabi?

Was this wasabi paste mixed into commercial mayo? I've done homemade mayo with wasabi powder added, had no problem.

Yup Heinz Light Mayo. I will try tonite with Best Foods Regular.

Watery Wasabi Mayo

Using lite is the issue. It contains water as one of the ingredients, beleive it or not.
Use regular mayo, it works every single time and will last for at least 5-7 days if it is commercial mayo, if not commercial mayo it should be good for 4-5 days. Put it in a squeeze bottle and you are ready to go !! Hellmans is the BEST !!

With wasabi powder, is it necessary to mix it with water first, then with the mayo? I once made it and the mayo was not turning green at all and was incredibly bitter.

As FoodBiz suggested, the lite mayo appears to be the culprit. Regular mayo holds well.
