Hi Chefs!

Here is one for you...If you were being dropped of on an Island where fruits, vegetables, rice and all seafood is plentyfull...and one of the things you could take with you is three SPICES; which would you take:confused: and why:confused: Salt and Pepper do not count! OK I'll start...I would take Saffron, Coriander, and Nutmeg. Why? High flavor, a little goes a long way and can last longer when in the whole form. Your turn:chef:

Oregano because if you're greek you don't mind it being in everything.
Cloves because it can accent either sweet or savoury dishes.
Mustard powder because you can use it to make mayo as well.

Cumin...Whole I'll grind it if i need to

Garam masala...great depth, heat and aromatics

Nutmeg... Great with everything except tomatoes...Dont really know why not??

Is garam masala considered a spice in this question? Or is it multiple spices? :roll:

Since this isn't in the chef's forum, I'll give my 2 cents.

Ground ancho chile, vanilla beans, and saffron. If vanilla beans aren't to be considered a spice, then cloves instead.

Actually.... when I make pastitsio or moussaka I top the tomato meat sauce with bechamel that's loaded with nutmeg. It's the absolute best flavor combo my mouth craves. Try it!
