A while back, I picked up a dried duck at the asian grocer. Duck being my wife's favorite meat, I thought this might prove interesting.
So I finally cooked part of it up based on a Jeff Smith recipe for dried duck with roast pork and lop chong in a clay/sand pot.
It was pretty good. The duck tasted more like ham than duck but then it was essentially "hammed" minus the smoke. Fattier than ham which wasn't a bad thing in this dish.
But I still have half of a dried duck left and am looking for other ways to cook it. Jeff smith has another dish, but it too pairs up with pork in a steamed setting so I don't see it being particularly different than what we already tried.
