Good morning~
I have been a Pastry Chef for just over two years. I purchased an existing coffee shop about that same time and I am planning on building a European style bakery to go with it. My clientele is growing and I am really beginning to get noticed. I recently found this forum and thought I'd check it out. I don't have alot of time to be on the computer but I will get on as much as I can. I'm looking forward to meeting other chefs, pastry chefs and bakers. I'm looking for ideas to stay busy in these coming winter months and this slow economy. I'm a little worried about getting financing for my expansion with this financial crisis looming over head. With that being said....here's to a great fourth quarter for everyone!:smiles:

Thank you for the nice introduction, Chef Tess. It sounds like you have some good growing pains, tempered with the uncertain economy (that's an understatement!).

I hope you visit here often to gather information from other pastry chefs, but also to share what you can with your peers and with avid home bakers, too. Don't miss the photo gallery, which as some exquisite examples of pastry, bread and sugar work; the cooking articles; recipes; reviews; and blogs, too! As busy as you are, I hope you sample a bit of everything when you get a chance.

Welcome Chef Tess.. I hope the best to you and your Bussiness in these uncertain times. I myself am a Chef, but I also enjoy baking bread and making simple pies and cakes. My frosting the cakes though need much work ( thats why I leave it to the professionals like yourself ) Anyways welcome to the forum and enjoy this site as much as you can find the time for.

Where do you work in Aucklund? Two of my good friends did thier externship there. I heard it is beautiful. Thanks for the nice welcome!! :)

i may be biased here

but i think Auckand is the most beautiful place
I live in new lynn , my man lives in newmarket i tend to live there 4 days aweek, and I work as a part time baker for a cafe in Ellerslie . What kind of externship did your freinds do and where abouts was it
